We wait all year long for holiday dinners. The traditional turkey, stuffing (or dressing if you prefer), cranberry sauce, and of course the mac and cheese cravings are started months in advance. But the holiday meal that does not get enough recognition is breakfast.
Christmas breakfast has always been a tradition for my family. I would wake up ahead of my daughter in the morning so she could not only awaken to gifts under the tree but a full spread in the kitchen. This year I’m going to add my version of a breakfast pizza.
Ingredients:
8-10 eggs
½ Turkey Kielbasa link (optional)
2-3 cups frozen shredded hash brown potatoes
1 ½ cup shredded cheese (sharp white cheddar shown)
Milk
Grated or Shredded Parmesan
Red onion
Bell Peppers (I used mini tri-colored)
Garlic powder
Onion Powder
Rosemary
Morton’s Nature’s Seasoning
Salt and Pepper
Olive Oil Cooking Spray
First, take the hash brown potatoes and toss them together with salt, pepper, rosemary, and about a ½ cup of the cheddar. Spread onto a parchment paper-lined baking dish. Sprinkle some parmesan and spray over it lightly. Bake at 400 degrees until just crisp.
In the meantime, beat together the eggs, a splash of milk, Nature’s Seasoning, onion powder, and garlic powder. Thinly slice the onions, peppers, and kielbasa. Then, grab a handful of fresh spinach.
When the hash brown crust is ready start layering by evenly spreading the slices of kielbasa, next the spinach, pepper, and onion, then cheese. Pop it back in the oven until the eggs are cooked and the cheese is melted.
Finally, cut and serve as part of your breakfast or brunch menu.
