Need a quick 30-minute main dish? Here’s my take on the classic Lemon Chicken. I served ours with garlic mashed potatoes and green beans. However, the possibilities are endless. Keep it light with a side salad or make it stick to your ribs with a side of pasta. Whatever you decide I’m sure this recipe will be one you add into your regular dinner rotation.
Ingredients:
1 package of chicken breast or cutlets
Roasted garlic
6-8 tbs butter
½ lemon (to taste)
Fresh parsley
Montreal Chicken Seasoning
Red pepper flakes
Rosemary
Onion Powder
Lemon Pepper
1 tbs olive oil
I used 3 good sized breasts and split them to make cutlets. Season with all the seasonings except the lemon pepper (save that for the sauce). Pan sear and brown on both sides in olive oil. Remove from the pan and set aside.
In the same pan, add butter, roasted garlic (I used about 5 or 6 cloves and smashed them a little in the pan. I personally like having some hunks of the garlic, but of course do as your taste-buds say), and lemon pepper. Once the butter melts squeeze in the juice of half a lemon. Simmer for just a minute or two. Add the chicken back to the pan and sprinkle the parsley on top.
