So, if your anything like me, this pandemic has packed on some unwelcome pounds. I need to back away from the fridge and the snacks. When it’s time to lighten up, salads are always a go-to. I can hear it now, “salads get boring” or “ugh! Rabbit food”. Well this Marinated Turkey Chop Salad will keep your tastes buds interested and inspire you to create your own not so boring salads:
Ingredients:
Turkey Chops (or Chicken Breast)
1 or 2 Eggs
½ Lemon
1 tbs. Minced Garlic
Shallots (1/2 larges shallot or 1 whole small, minced)
1 tbs. (heaping) Pesto
1/3 cup Olive Oil
Pink Himalayan Sea Salt
Pepper
Your favorite Salad Vegetables
Salad Dressing of Choice (I would suggest Blue Cheese, Balsamic Vinaigrette, or reserve some of the marinade)
Optional: Shredded/Crumbled Cheese, Croutons
Let’s get started:
Wisk garlic, lemon, olive oil, pesto, shallots, salt, and pepper in a bowl to make the marinade. Salt and pepper to taste. Pour over chops.
Marinate the turkey chops for at least 1-2 hours. Remember the marinade has lemon in it. Don’t leave the chops sitting for too long. The acid in the lemon will start to cook the meat. In the meantime, hard boil the eggs and let cool.
Grill or pan sear the turkey chops. (Won’t take long, so don’t go far.)
Lastly, assemble your salad. I paired mine with a baked sweet potato. Light, filling, and healthy. And there you have it! Dinner is done, enjoy!
