The Salmon Cake. We all know it and love it. It has been a staple meal growing up in many of our households whether it was for breakfast, lunch, or dinner. Pleasing to the palate and comforting to the soul. It is also pleasing and comforting to the wallet for families. Here is a simple and tasty recipe to make the Salmon Cake part of your family’s favorites:
Ingredients:
14.75 oz can of salmon
Small onion
¼ to ½ bell pepper (color of choice)
1 tbs. Minced garlic
2 Eggs
½ cup Breadcrumbs
Old bay
Italian seasoning
Garlic powder (just a smidge)
Onion powder (just a smidge)
Adobo
*Chili Powder or Cayenne Pepper
Vegetable (or Grapeseed) Oil for frying.
Start by dicing your onion and pepper. I try to dice them as small as I can for my toddler who loves to eat these.
Next drain and flake the canned salmon. Remove as many bones as you can. The bones are very soft so if you don’t get them all it should not be cause for alarm.
Add the onion, peppers, eggs, breadcrumbs, and seasonings (to taste) and mix well. If you’re making this for just adults and/or for those that like a little kick, add a little heat with chili powder or cayenne pepper.
Form your cakes (makes about 8, average serving size 2 per person) and fry.
I like to serve mine with a squeeze of lemon or lime juice and a Special Sauce I concocted that has become a must have when I make these (measurements are approximate):
3-4 tbs. Mayonnaise
2-3 tbs. Ketchup
Hot Sauce (to taste)
2 tsp. Minced Garlic
1 tsp. Recaito/Sofrito
½ tsp. Cilantro
Mix all ingredients together and dollop, drizzle, bathe, however much you would like onto your Salmon Cakes and enjoy!
