This little gem of a cookie recipe came my way years ago during a dieting phase. I was looking for something to take the edge off when I craved something sweet. My daughter also came to enjoy them. Now my toddler son loves them so much they are back to being in regular meal prep rotation.
Ingredients:
2 overripe bananas (brown, spotting)
1-1½ c Instant Oatmeal (2-3 packets if using those)
This is the fun part…
When I started making these, I used raisins and/or dried cranberries. Any other dried fruit will also work. Chocolate chips are always a classic and usually on hand. When I make them now, I mostly use peanut butter.
Then you can continue to create ensuring that your banana/oatmeal base is balanced. Fresh or frozen fruits are great adds too. Cinnamon, a little maple syrup, or a drop or two of vanilla extract take it next level.
You also have your options of making them into cookies by spooning them in your desired size onto a baking sheet or evenly spreading the mixture onto a baking sheet/dish to make bars.
Bake them at 350 degrees for about 10 minutes and you’ll have a chewy, sweet treat without having to sacrifice your cheat day.
