Food & Wine Fest - Da Que Interview

Before the sun arose, The Wordsmith was on the road. Early and active, he drove from Newark into Columbus in time for The Food and Wine Festival Media Day. After parking on the corner of Park and Millay, he meandered down toward the front of Goodale Park to gather with the rest of the event participants. The first food truck to go by was Da Que so we took a moment to see what they’re all about in Columbus, Ohio.

Intros & Backgrounds


The Wright Life: Good morning, folks. We are currently located on the corner of Park St. & Goodale in front of Goodale Park getting ready for our Food and Wine Festival Media Day. If you just want to introduce yourself - tell us a little about your brand.


Da Que: We are Da Que barbeque from Amanda, Ohio. We serve brisket, pulled pork, chicken, ribs, smoked turkey, macaroni & cheese, baked beans - comfort food.


Da Que: We also do catering, weddings, corporate events. We even do small gatherings for birthday parties and different local events.


TWL: Very cool. So you guys said you’re from Amanda, Ohio. What brought you out to Columbus today?


Da Que: Well, we have been invited. We usually set up near South Columbus but we wanted to expand.

Festival Wine Pairings


TWL: Absolutely! The Food & Wine Festival is set to take place Friday July 30th and Saturday July 31st. What might be a great wine pairing with some of your barbeque?


Da Que: Anything with a red. Any sweet red goes with our brisket. We have a mac n’ cheese brisket burrito I think that would probably go good with a sweet red. Anything white would go with the pulled pork. Maybe more of a drier white.


TWL: *Turns to Da Que lady* What would you say, ma’am?


Da Que: I have no idea!


Strongest Senses to Look For


TWL: Just wash it down right? It’ll taste good. It’ll feel good. I love to hear it. So, how might this experience contribute to a good sensory evaluation?


Da Que: Hmm. Could you elaborate a little more?


TWL: Yes. What kind of senses are going to be used the most?


Da Que: Definitely taste! Smell is really one. The smell from our trailer brings people over because they’re curious.


TWL: Uh huh!


Da Que: So between taste & smell & sight. Once they feel the texture of the sandwich it will probably use all five senses.

TWL: Okay, so it’s like a good bass system. You can hear it coming from around the corner, you can smell the smoke from the pork all the way down the block.


Da Que: Correct!


TWL: Awesome! Is there anything else you’d like to add to the people in the Free World?
